Egg yolk with peppers, chanterelles and crusty bread.
Ingredients and Elaboration
Ingredients:
- 8 roasted peppers.
- 4 egg yolks.
- 150 gr of chanterelles.
- Olive oil
- Black pepper.
- Salt.
- Brioche bread.
- Shisoo green.
Elaboration for the peppers:
Cut the peppers into strips and sauté them in a frying pan with a little olive oil and salt. Reserve it in a warm place.
Elaboration for the egg yolk:
Place the egg yolks in a bowl and cover it with olive oil. Cook them for 4 minutes in the oven at 65ºC.
Elaboration for the chanterelles:
We clean the mushrooms from ground and grass well and saute them in a frying pan with olive oil. Season it and reserve in a warm place.
Elaboration for the bread:
With the help of the cutter, we cut sheets of bread (0.5cm thick and 2cm x 10cm). Bake at 165ºC with some weight on the top to make it be smooth. Remove from oven and reserve.
Presentation
In a deep dish, place a pile of peppers, leave a hole in the center and put the candied egg yolk. On the yolk and without touching it, put the lamina of toasted bread.
Put the sauteed chanterelles and some shisoo green shoos.
