Strawberries with chocolate, cream and pistachios.
Ingredients and Elaboration for 4 people
Ingredients for Chocolate:
- 200 gr of chocolate 62%.
- 50 gr of milk.
- 75 gr of cream.
- 25 gr of butter.
- 3 eggs.
- 20 gr of sugar.
Elaboration:
- Join the chocolate, the milk and the cream and cook it over low heat.
- When it has been melted, add the butter.
- Separate the egg-whites from the egg yolks.
- Mix the latter with the sugar in a bowl until they are fluffy.
- Add the chocolate to the egg yolks, beat the egg-whites until they are stiff and mix them with wrapping movements with the previous mixture.
- Put the mousse in a bowl and reserve it on the refrigerator.
Ingredients for the mixture of soil:
- 50 gr dehydrated chocolate cake.
- 50 gr of biscuit paillete.
- 50 gr of crambel mass.
Elaboration:
Crumble the chocolate cake and mix it with the biscuit paillete and the crambel mass.
Ingredients for cream ice cream:
- 150 gr of sugar.
- 3 egg whites.
- 400 gr of cream.
Elaboration:
Lift the egg whites together with the sugar, mix well with the cream and leave in the freezer until you get a hard ice cream.
Ingredients for the pistachio green:
- 100 gr fresh peeled pistachio.
Elaboration:
Grind the pistachios until they are very thin (as if it were pistachios flour.
More ingredients:
- 12 strawberries.
- Mint leaves.
- Sal gruesa.
Presentation
Put some chocolate mousse in a plate and spread it on an irregular way. Then, cover it with the mixture of soil, place the strawberry (sliced into quarters) and some small balls of ice cream.
End putting ground pistachio and some fresh mint leaves.
