Cheese cream with smoked anchovy, zucchini and pepper ice cream.


Ingredients and Elaboration


Ingredients:

  • 100 gr of Idiazabal Cheese.
  • 250 gr of Milk.
  • 4 Smoked Anchovies.
  • 1 Zucchini.
  • ½ Fresh onion.
  • Olive oil.
  • Salt.
  • Pepper ice cream.

Elaboration:
Melt the cheese to the water bath and add milk until it has a creamy texture.
Put the cream in a bowl and cover it with plastic film.
Cut the zucchini and onion into small dice and saute it in olive oil.


Presentation

Put the cheese in a soup plate and the zucchini. On top of this, a quenelle of peper ice cream.
Cut the anchovies into small pieces and place them on the plate.
Finish with olive oil.
